Salmon or Tuna Filet
Medium Red Onion Minced
Garlic Fresh Minced
Olive Oil
Feta Cheese
Parsley Fresh Chopped
Panko Bread Crumbs
Roasted Sweet Potatoes (see recipe)
Salt & Pepper to Taste
Parsley to Garnish

1 - Saute Onion and Garlic in Olive Oil over medium heat until soften.

2 - Combine Onion and Garlic in bowl with remaining ingredients. Stir to combine.

3 - Place fish on half sheet pan and season lightly with Salt and Pepper on both sides.

4 - Top each filet with the feta mixture and press down to make it adhere.

5 - Bake the fish in a 400 degree oven for about 12 minutes.

6 - Arrange Roasted Sweet Potatoes (see recipe). Place fish on top and garnish with fresh Parsley.
